  • Marinated salmon with brioche bread and soya mayonnaise
  • Seared octopus, potato mousse, confit cherry tomatoes and Taggiasca olive powder
  • Pumpkin flan, Taleggio cheese fondue from our valleys and crispy sage
  • Juniper-flavoured beef carpaccio, fresh spinach and pomegranate
  • Cotechino sausage and lentil pastry with Branzi cheese cream

First courses

  • Tortelli (stuffed pasta) with sea bass, ricotta and mint in seafood sauce
  • Fresh pasta with tomato Mediterranean style, fresh tuna and Buffalo’s stracciatella cheese
  • Classic Amarone Risotto from Valpolicella with Parmigiano reduction
  • Potato gnocchi with porcini mushrooms, sausage and Formai de Mut cheese
  • Casoncelli from Bergamo tradition (fresh pasta stuffed with meat, spices, butter, sage)
